Vanilla Genoise Sponge

Yellow, fluffy sponge that is absolutely delicious! It lasts for a few days and is perfect for layered cakes. Love it!

~ 3 Tbsp butter
~ 3 eggs
~ 1/3 cup sugar
~ 1/2 cup flour
~ 1/2 tsp baking powder
~ 1/8 tsp baking soda
~ 1 Tbsp corn starch
~ Pinch of salt
~ 1/2 tsp vanilla extract

Melt butter and cool it off
In the bowl sift: flour, baking powder, baking soda, cornstarch, and salt.

In the mixer (whisk attachment), whisk eggs and sugar until pale, mousse-like and thick enough to leave a trail (for 3 sec) when the whisk is lifted from the mixture.
Fold in half of flour into the egg mixture.
Fold in half of the cooled butter (gently pour around the edge of the mixture).
Fold in the rest of the flour into the egg mixture.
Fold in the rest of the cooled butter (gently pour around the edge of the mixture), and vanilla extract.

Use 7” round spring form
Grease bottom of spring form (not sides) and line it with a parchment paper.
Bake at 350 for 25-27 min until sponge springs back when lightly pressed with a finger.
Leave to cool in the pan for a few minutes, then remove it from the pan and cool on cooling rack.
