Fluffy, light and delicious! This Polish crepe recipe was my grandmother’s who adored apples! Once you make them, you will always go back to this recipe for more!
~ 1 cup of milk
~ 1 cup of sparkling water
~ 2 eggs
~ 1 & 1/2 cup of flour, sifted
~ Pinch of salt
~ 2 Tbsp veg. oil
~ 1/2 tsp vanilla extract
In a bowl whisk milk, water with eggs.
Add flour, veg. oil, vanilla extract and salt.
Mix only until combined.
Place it in the fridge for 20-30 min to rest.
Take it out of the fridge, whisk again to combine.
With a small ladle pour batter into the skillet, swirl the batter to evenly coat the bottom (if you get any small gaps, you can fill them with a few drops of batter).
Once the bottom is lightly golden, flip the crepe using a sharp-edged spatula to easily get under the crepe.
Apple filling:
2-3 apples shred on the grater. In pan cook apples with 2 tbsp sugar. Cook till soft. Spread on one side of the crapes, roll it and drizzle with caramel.
