Traditional Polish Crepes -Nalesniki

Traditional Polish dessert known as crepes. This is a great base; they are versatile and delicious! I like to enjoy mine with a strawberry jelly, but can also be used in many other ways like krokiety (sauerkraut and mushroom croquettes).

~ 1 cup of water
~ 1 cup of milk
~ 2 eggs
~ 1 & 1/2 cup of flour
~ Pinch of salt

In a bowl whisk milk, water with eggs.
Add flour and salt.
Mix only until combined.

Place it in the fridge for 20-30 min to rest.
Take it out of the fridge, whisk again to combine.

With a small ladle pour batter into the skillet, swirl the batter to evenly coat the bottom (if you get any small gaps, you can fill them with a few drops of batter).

Once the bottom is lightly golden, flip the crepe using a sharp-edged spatula to easily get under the crepe.

Spread a strawberry jelly and fold them.
