Strawberry and Chocolate Squares

Super refreshing and yummy in flavor, these strawberry squares are a delight to eat and show off. They feature cream on the bottom with strawberry cream on top frozen to form perfect squares. A drizzle of chocolate adds to the flavor and appeal. A fresh strawberry on top completes the look!

Strawberry Squares:
~ 1 packet of unflavored gelatin
~ 1/2 cup milk
~ 8 oz sour cream
~ 10 oz cool whip (it should be fully thawed, not frozen)
~ 3/4 cup granulated sugar
~ 12-14 fresh strawberries (or 8 oz frozen strawberries, fully thawed, not frozen)

Chocolate Drizzle:
~ 2/3 cup chocolate chips
~ 1-2 Tbsp of butter
~ 1 Tbsp heavy cream

Strawberries: Blend frozen or fresh strawberries. Put aside.

Sour cream mixture: In a mixer (with whisker attachment) whisk the sour cream with cool whip and granulated sugar until blended. Set aside.

Gelatin: Sprinkle gelatin on top of 2 Tbsp cold water. Let it set/bloom.
Heat up 1/2 cup milk and dissolve bloomed gelatin in it. Stir until dissolved. Strain it to remove any clumps.

Assemble: To sour cream mixture pour gelatin while whisking on slow speed. Divide into 2 parts:
First part – leave it the say it is.
Second part – add blended strawberry

Using square silicone squares mold pour strawberry mixture until halfway through. Then, on top pour the cream mixture.
Place in freezer to set.

Remove the squares from the silicone and place on the plate. Put the plate in the freezer until chocolate drizzle is ready.

Chocolate drizzle:
Over the simmering water, in a bowl melt 2/3 cup chocolate chips, add 1-2 Tbsp of butter to chocolate (to make it glossy). Once melted, take it off the heat.
Once chocolate is off the heat, add 1 Tbsp heavy cream. If chocolate is too runny, add 1 tbsp of sugar powder.

Pour the chocolate drizzle over strawberry squares. Work fast as it sets pretty quickly.

Add a strawberry on top as decoration.
