A traditional Polish vegetable salad; my grandma used to make it for special occasions and holidays. Made with cooked root vegetables, potato, carrot, parsnip, peas, and hard-cooked eggs combined with mayonnaise and mustard. Served as stand alone, with ham or a side dish. Super easy to make and stays fresh for days!
~ 3 potatoes (peeled)
~ 3 carrots, peeled
~ 1 parsnip, peeled
~ 1 celery
~ 5 eggs, hard-boiled
~ 3 pickles
~ 1 granny smith apple
~ 1 can green sweet peas, drained
~ 1 cup mayo
~ 1 tsp Dijon mustard
~ Salt, pepper
~ Smoked paprika (optional)
Boil: potatoes, carrots, parsnip, and celery until just soft.
Drain and cool.
Chop into small cubes.
Cube: eggs, pickles, and apple.
In a bowl combine all cubed veggies, peas, mayo, mustard and salt & pepper.
Cover and refrigerate for at least 1 hr.
Serve as stand alone, with ham or a side dish.
