Any Color Mirror Glaze

Easy to make, delicious in taste. And impressive in looks! This recipe can be used with any color; here I used yellow and orange. Yum!

(yields about 1.5 cups)
~ 1/4 cup sweetened condensed milk
~ 1/2 cups granulated sugar
~ 1/4 cup water
~ 2/3 cup white chocolate chips
~ 2 tsp gelatin (+ 2 Tbsp water to bloom)
~ food color: yellow and orange

In a small bowl bloom gelatin in 2 Tbsp of cold water and set aside for 5 minutes to allow to bloom and absorb all the water.

In a pot heat sugar and water over medium heat and bring to a simmer (until sugar dissolves).
Remove from the heat and add the bloomed gelatin and stir until dissolved.

Place chocolate in a tall size cup and pour the hot mixture over the chocolate. Then, emulsify with the immersion blender.
Stir in condensed milk and emulsify with immersion blender again.
Add food coloring.
The glaze will be ready when it reaches 95F.
Pour it over a FROZEN cake.
